I should point out that the "butt" isn't the rear end of the pig, it's the area over the front legs.   The stuff over the rear leg is the ham.

I've been cooking whole pigs for years (everything but the squeal).

My local butcher lets me pick out the one I want to cook.    My wife says how I chose, and I told her I get the cute looking ones because they'll be the tastiest.

I made pulled pork with a Jack Daniels Apple gravy last weekend,and yes pork butt low and slow 175 degrees for 13 hours. Turned out so juicy and fall apart tender , you didn't need a knife . I buy a hog with a friend and we split it $125 each ,gives me tons of pork to cook with.

I like to make pork 'Que with fresh apple cider and Monterey cherries also.
