Umm...Hi, I'm Joey and I'm from Seattle. Jus' wanna say that it's kewl being here and wanna introduce myself: 41, love to cook, fly Flight Simulator, chase storms, work on things that move to make 'em work better or bring them back to life, umm...I like goin' to Canada a lot and did I say I like ta cook? Well, lemme see what I can dig up later, but for now, I got some great ideas for my world-famous devilled eggs...

Recipe for: Joey's Famous Devilled Eggs. It's not all that complex and it does away with all those ugly sprigs of parsley and all, but who eats that anyway? Heehee

1 Dozen eggs, hardboiled in salted water

Mayonnaise (Or Miracle Whip of you're more inclined to that)

Shell the eggs, halve lengthwise, dumping the yolks into a small bowl and the white halves onto a tray, pocket-side up. Mash the yolks with a fork until somewhat fine and powdery in consistency. Add mayonnaise or Miracle Whip until yolk mix is just on the damp side of dry; You don't want it mushy or sloppy; Just enough to be firm yet not dry anymore. Stir very well until you get a good, consistent yolk. Spoon into egg white halves and then you can add...

* Traditional paprika: Just gently sprinkle any paprika on top.

* Curry: Get a good, powdered curry powder and sprinkle just like paprika. You'll LOVE these (My family sure does)!

* Others you can use are: Chili powder, bacon bits (Breakfast! LOL), pimiento, or you might know of more.

Another one I like to make is: Finely-minced celery, onion, carrot and cilantro in the yolk for veggie-eggs.

One hint: Whenever I make eggs for a family gathering, I usually boil 5 dozen eggs (That's 120 devilled eggs!) and mass-production is really helped along if you use a cake-decorating bag for filling the whites with yolk mixture. Not only is it faster and neater, but you can use various large tips to get very cool, decorative patterns in the yolk.

Sweet! Sounds Yummy! We usually only make deviled eggs on Thanksgiving but your recipe sounds much better than mine.
