In all honesty, I probably wouldn't say anything. And by probably I mean "lol yeah no, never." BUT, it probably would be a good idea to disclose that (hey you never know), IF: this becomes a permanent change, AND if your boss seems mature enough to handle that kind of info.

being incontinent and working in food service it can cause some issues because some states say no but im unsure if its FDA or the state that says it

I am a pastry chef working at least half of my day in a kitchen and wear a diaper for urinary incontinence as a result of my obesity. It is not a problem whatsoever. My boss is aware of this condition - again - not an issue.
