No, it is not an adequate diet for an adult but it will certainly not harm you in anyway. Baby food lacks fiber, fat, and protein found in a healthy adult diet.

Nothing wrong with it, but it would be expensive. Baby food is crazy expensive when you consider how much an adult typically eats in one sitting. If you can afford the money sink, go for it.
