Little Sherri Posted March 2 Posted March 2 I initially thought this thread was about the musician! Meatloaf can make a good dinner, it all depends on how much thought the chef put into it. I used to dread meatloaf night, when I was a kid - it was an overcooked log of hamburger that you tried to revive with an equal-by-weight dose of ketchup. However, my wife puts a bunch of seasoning into it, doesn't cook the life out of it, and serves it with garlic mashed potatoes and a veg, and voila, savory. 1

Try meatloaf with 2/3 ground beef and 1/3 sausage, bread crumbs and oatmeal mixed in with an egg and some chopped green pepper. Instead of tomato sauce, pour a jar of alfredo sauce over instead, then shredded parmesan cheese. Makes it taste kind of like Swedish meatballs in gravy. 1
Babypants Posted March 3 Posted March 3 Ground beef, onion, green pepper, corn flake crumbs, one egg, and either ketchup or a dark BBQ sauce of the Kansas City variety. But the key is seasoning. I favor oregano, like my mother and maternal grandmother before me. 51 minutes in the oven at 350. I make it crumbly and serve it over Jasmine rice with a vegetable-- beets is my favorite.

Of course I like to sprinkle the corn over the mashed 'taters. And some gravy is good, but not required. I like my meatloaf with catsup over the top before put in the oven. Then it bakes in nicely.
willnotwill Posted March 3 Posted March 3 I love me some good meatloaf. While working on weight loss, I've been using fairly lean ground turkey rather than beef. Wife and I like lots of veggies in ours too: peppers, onions, mushrooms, etc... More often than not I use a salsa verde glaze on the top
