If you use an electromagnet, you should operate it off a battery...small enough to run down in six or so hours of operating the magnet.

Also, the guys at Mr S leather use ice locks for solo bondage quite a bit. In your case, I, "Rube Pickle", would build my stocks with a self-closing latch, for example using a spring-loaded utility clip, secured to an ice-locked link, such as a plunger in a can of ice. Some experimentation will e required to figure out the release time and the best configuration, but that is half the fun. Maybe run a chain through the middle of a can of ice?
